Sugar Tong
Tong Yuan recipe?
Having a hard time finding a Tong Yuan recipe, especially for the ginger/sugar broth that it’s served in. Any great family recipes to share?
TONG YUAN (NEW YEAR SWEET DUMPLINGS)
Ingredients:
2 cups glutinous (sweet) rice flour
1 cup cold water
ginger
½ cup sweet black bean paste
Brown sugar, to taste
Preparation:
1. Combine flour and water and mix until you have a smooth dough. Then divide it into thirty balls, about one-inch in diameter.
2. Flatten each ball into a two-inch circle with your hand and place 1 teaspoon of bean paste in the middle of the circle. Fold dough over and seal and reroll into circles.
3. Boil six cups of water, add dumplings and stir them to prevent sticking. When they float, simmer for five minutes, strain and serve.
4. Best to put four of them into a bowl and add brown sugar to taste. Serves six.
Approximate nutrient analysis: per bowl of five dumplings, assuming recipe has two tablespoons brown sugar. Every serving will have 182 calories, 41 g carbohydrate, 4 g protein, 8 mg sodium, ½ g total fat, no saturated fat, and no cholesterol.
TONG YUAN WITH SWEET RICE WINE
To the above recipe, add 2 Tablespoons sweet rice wine made with fermented rice to the water. This can be purchased, or better yet, see Flavor and Fortune’s July 1995 issue, the recipe is on page 9.
Approximate nutrient analysis: per bowl with five dumplings in it, as above. Every serving has 188 calories, 42 g carbohydrate, 4 g protein, 69 mg sodium, 1/2 g total fat, no saturated fat, and no cholesterol.
TONG YUAN WITH PEANUT BUTTER
To the Tong Yuan recipe above, substitute the sweet black bean paste with the following mixture:
1 cup chunky peanut butter
3 Tablespoons brown sugar
1 Tablespoon toasted seeds (optional)
Approximate nutrient analysis: per bowl with five dumplings in it. Each serving has 248 calories, 37 g carbohydrate, 6 g protein, 77 mg sodium, 8 g total fat, 2 g saturated fat, and no cholesterol.
During Chinese New Year, most families, rich or poor, like to make this snack. Probably because of its color, which is golden brown, it looks like a tangerine and is very tasty; all of these lead to good luck and prosperity. “Nian nian jian dwei, ren vu wo yu” translates to “Every year jian dwei, we all have it” and there is nothing more important than starting the year right. Jian Dwei is the Cantonese name for the Glutinous Rice Sesame Balls that follow:
