French Knife
I’ve discovered a French recipe I rather like the sound of, but what does ‘rable’ mean – circumflex over the a?
It’s for lapin au sauce moutarde.
I’m not squeamish – I’ve done a jugged hare before now.
As my local butcher has wild rabbits in stock at this time of year and has a wider selection of knives and cleavers than I have it would probably take him less than a minute to joint and cut something I would take ages over, and could mess up.
A rable is the saddle of hare/rabbit, comprises the whole of the back of the animal from the beginning of the neck to the tail, the bones of the ribs being cut very short. Sometimes butchers just use the carcass from the tail to the first rib. It should have all the sinew removed, be well trimmed and finely larded with pork fat. You shouldn’t need to marinate the meat unless the animal is older, or if the recipe calls for it, but then the marinading process should be kept short.
