Can you keep mayonnaise on the shelf after opening it?
I once heard a story about a man who kept mayo on a shelf on his boat with no refrigeration. The secret was the fact that he used a wooden spoon. I heard another story from someone else about a guy who lived in a house that had no electricity, and he kept mayo as the only condiment on his table. I have also seen recipes for mayo that call for the use of a wooden spoon and a glass jar for storage. Another interesting thing I have heard about mayo is that it doesn’t usually spoil on its own, only when it is mixed with something.
So I hope that someone who has some actual knowledge will step in please advise…
Okay here’s the thing.
Ideally you Should refridgerate your mayo. However we used to buy bulk mayo for my MIL resturant that specifically stated that it did not need to be refridgerated after opening. Yes it was real mayo not miracle whip.
My mayo often gets left out for hours on end or even over night and it has never killed any of us.
In such things as potato salad where every one gets paranoid about the mayo dressing going bad. Well they should stop worrying about the dressing so much. It’s the potatoes that grow cooties first. Saw it on Americas Test Kitchen a couple of weeks ago.
Eggs can actually be kept on the counter wiwth no problem, so actually mayo should be okay.
I also just like my mayo cold on sandiwches and when I make things such as egg, tuna or chicken salad, or deviled eggs etc…
